These are what oyster mushrooms should look like. Justin harvested them 'aggressively', taking a large hunk of the stem with the fruiting body with the express intent of using the stem for innoculation. The stem is covered with the growing medium or substrate: straw. This is also a decent photo of the gills. The smaller cluster on the left has a more cleaned stem area.
