Lakefront Brewery is rumored to have worked with the CIP model and is one of a few organic brewers in the country, let alone the midwest.

This is an awesome thread that features brewers talking about what they have and haven't done in the resource efficiency space and how to do it.

I heard through the grapevine that Storm Brewery had implemented the CIP process and cultivated mushrooms on their waste. I have yet to confirm this with anyone at SB.
