So, really, folks... Something I observed when I was in socially responsible investment research was that the UK and Europe were a few years ahead of the US. I believe this could be another example in support of theories I have posited here on the site about land based protein scarcity. Only about 35 recipes, but I like the way the site is setup and I can personally attest to the Chanterelle recipe: "Girolles a la forestiere". I would suggest reducing the amount of time for the secondary sautee of the mushrooms, perhaps browning the potatoes first, then adding the chanterelles 10 mins or so into the process, turning down the heat when adding them in... I prepared the dish with asparagus and sauteed chicken breast. It was excellent.
